Asian Pork Tacos


Hello and happy May everyone!  My son-in-law got my computer up and running - yay!!!!  You don't realize how much you rely on technology until you don't have it anymore.  Although, other than not being able to work on this blog, I didn't really miss it too much.  In fact, it was kinda of nice to not be so "connected".  I encourage all of you to take a break once in a while.

In the meantime, training our new puppy has taken up all of my spare time.  I decided last night that in some ways having a puppy is actually harder to deal with than having a baby!  She is terrorizing my cats, which is driving them and me crazy.  Just when we think she has got the potty training thing down, oops, an accident!  However, in other ways she is doing really well and she's very smart.  Either way, she's the cutest thing ever, so I can forgive the constant chewing on everything that exists in the house....for now.

Anyway, on to food.  I made this dish a few weeks ago.  Since baseball started last month for my son, I've had to try to come up with quick and easy meals.  Baseball is 6 days a week, so between that and this puppy, finding the time to cook dinner during the week has been difficult.  Where we live there aren't too many fast food options, which is fine with me because I avoid those places as much as possible anyway.  Besides, eating out that often can get expensive.  So this is one dish I came up with - gotta love the crock-pot!  Plus I got to eat the leftovers for lunch for a couple of days, which was a nice added bonus.  Delish!



Asian Pork Tacos

2 pounds boneless pork loin, cut into 4 pieces
1 cup hoisin sauce
1/4 water
3 garlic cloves, minced
4 green onions, thinly sliced, plus extra for garnish
1 tbsp fresh ginger, minced
1 16-ounce package of coleslaw (click here for my recipe)
Small tortillas

Add the hoisin sauce, water, garlic, green onions, and ginger to the bowl of your slow cooker and stir to combine. Add the pieces of pork and turn each piece over a few times to coat them evenly with the sauce.  
Cover and cook on low for 8 to 9 hours, or until pork falls apart when poked with a fork.  Remove pork from slow cooker and shred, then add in the sauce and stir well to combine. Serve in warmed tortillas with slaw on top.
