It's almost time.....I feel like we've been waiting forever. One more day and we get to see BRUCE (Springsteen) live!!!!!! I am sooooo excited!!!! Bruce is one of the only singers that my husband and I both like, so when I heard he was going on tour I knew I had to get tickets. It will be nice to get away, even if it's just for one night, with my husband to see one of the most amazing performers ever. Have I mentioned how excited I am????!?!?!? BRUCE :)
Finding a good cornbread recipe is not easy. Most are too dry, some are too sweet and some don't have the right cornmeal to flour ratio. I have tried tons of cornbread recipes, none of them living up to my standard for the perfect cornbread. Then finally I came across this recipe that to me made the perfect cornbread. The only negative thing about it was that it was on the sweet side, so after a few modifications I think I've got the perfect cornbread.
Perfectly Moist Cornbread
1
cup all-purpose flour
1
cup cornmeal½ cup sugar
2 ½ tsp baking powder
1 tsp salt
1 cup milk
1/3 cup vegetable oil
1 egg
Preheat
oven to 375, and spray an 8x8 baking dish with cooking spray. In a large bowl combine all dry
ingredients. Add the egg, milk and
vegetable oil and stir until just combined.
Pour batter into pan and bake for 25-30 minutes, or until toothpick inserted
into the center comes out clean.
Bruce should be a good show, he can rock!

DeleteWould you please tell me how you adjusted the sugar? I am trying to find the perfect cornbread for my granddaughter. She loves the cornbread they sell at Miller's Smorgasbord in Lancaster, PA., which is Amish Country. I took her there last night just for the cornbread and they weren't serving it. I even tried to buy it from their bakery and they don't sell it in their bakery. Please help me find what she is looking for. I want so bad to find this for her.

ReplyDeleteMake this twice a month. Including my sister in laws baby shower. IT IS ALWAYS RAVED ABOUT!!!!! Love spreading some butter on the top when it comes out from a hot oven then cutting it up into squares. I double it every time and it fits perfectly in a 9x13. THANKYOU
